Our own apiary is a centrepiece for terroir-infused honey—take a tour and meet the bees.

Our bees diligently forage on the wildflower meadows surrounding our property, including clover, goldenrod, and dandelion, resulting in our delicate, floral honey. We offer two distinct and exquisite varieties - spring flower and summer flower - each with its own unique flavour profile.
Taste the unique flavour of birch syrup, sourced from the sap of majestic birch trees that surround our property. This caramelized and savoury syrup adds a touch of enchantment to our culinary creations.
Dinner at Le Hatley is truly a unique culinary experience. Our menu items highlight the bounty of the province of Quebec, and we grow, forage and pick only what is needed, working closely with local farmers and producers.
