A spring awakening
The weather warms and the land awakens with lush grass and colourful flowers. Our English garden bursts with a treasure trove of fresh herbs and produce harvested for Chef Vachon’s seasonal menus, accompanied by house-made birch syrup and regional ingredients like artisan cheeses and freshly-caught seafood.
Find a seat on our bistro terrace to enjoy breathtaking views of the gardens and lake. When the ice retreats, the pristine waters of Lake Massawippi invite fishing and paddling for our guests. Meanwhile, in the charming town of North Hatley, you can explore local artisans, boutiques, stores and restaurants.
Wander through the trails listening to the sweet birdsong of Swainson’s thrush and Warblers echoing in the forest. The hum of buzzing bees fills the air, as our beekeeper collects the first flower honey of the year, capturing the essence of spring in a single drop.
Long live summer
Endless summer days are unfolding stories. Embrace the stillness as you luxuriate in the warmth at our pools, private dock and beach. Plunge into the tranquil lake to beat the summer heat or venture into new waters by canoe, kayak or boat. Our expansive gardens, radiant with summer blooms and wildflowers, are a serene setting for walks and artisan cocktails in the sunshine.
Taste the summer harvest at our restaurant and bistro, where Chef Vachon prepares farmed and foraged delicacies like wild mushrooms, sea plants, and local produce. Meanwhile, the Eastern Townships are bustling with incredible foodie experiences. Browse farmers’ market stalls, and visit local farms and wineries to sample the regional ingredients.
Seek autumnal bliss
Leaves of rouge, tangerine and aubergine herald the arrival of fall in the Eastern Townships and our well-appointed rooms offer incredible views of the spectacle from every angle. Bundle up and set out for a crisp walk amidst the vibrant Sugar Maples and Tamarack Larches, inhaling fresh mountain air with a faint scent of wood smoke hanging in the breeze. Explore local trails and parks by bike, or spend time on the lake fishing and paddling.
Surrounded by rich agricultural lands, we are blessed with a bountiful fall harvest that inspires seasonal festivals and imaginative chefs. Savour the season in our restaurant, where fowl, foie gras and farm-fresh produce are on the menu.
Come winter, Manoir Hovey transforms into a snowy dreamscape where the muffled silence of snowfall brings inner peace. Don snowshoes and wander the trails, where you may see the dainty tracks of a Hare or White-Tailed Deer. Go skating or ice fishing on the frozen lake as Bald Eagles soar overhead, or glide through the magnificent Appalachians on skis.
It may be cold outside, but the crackling fire and cozy atmosphere inside the manor are sure to warm the soul. Savour a winter meal, prepared with the utmost care from house-made preserves, cellar staples and root vegetables plucked from local terroir.
