Our Sustainability Journey
Our historic property has been nestled in the Appalachian foothills since 1899, surrounded by vast forests, crystal-clear lakes and winding rivers. The rich history connects us with generations that came before us and inspires us to preserve the planet for generations to come.
Moving forward on this journey, our guiding light is the Relais & Châteaux sustainability values of social and societal empowerment, environmental conservation, and sustainable cuisine. As a La Table Ronde member, we are committed to reducing our impact on the environment and believe that every action we take, large or small, can make a difference in creating a more sustainable future.
Every journey begins with a single step and we are striding towards a vision where travellers can have an enriched and fulfilling experience, while reducing their impacts.
Restoring Canadian forests
From birch trees to spruce, the incredible forests of the Eastern Townships are diverse and vibrant. In partnership with One Tree Planted (see image above in Quebec), we plant one tree in Canada per booking in the hotel to contribute to reforestation efforts. Our commitment is also demonstrated by the wooden key cards at our property.
Bee the change
Set amidst Manoir Hovey’s vibrant estate gardens, our apiary is home to two beehives that are carefully tended to by resident beekeeper, Jérôme Dubois. Apiculture is a shining example of sustainable food production and a wonderful hive-to-honey experience for our guests. Don beekeeping attire and visit the hives to learn how these pollinators improve our local biodiversity and sample the sweet nectar for yourself.
From dock to dish
Sustainably harvested food is better for the planet and it tastes delicious. We partner with La Fourchette bleue, which encourages Quebec restaurateurs and fishmongers to use little-known species from the St. Lawrence River in an effort to conserve biodiversity and support sustainable development. Gourmands who dine in our restaurant and bistro may indulge in freshly-caught showstoppers like lobster, halibut or redfish. To further advocate for sustainable marine resources, we annually celebrate World Oceans Day with Ethic Ocean and other members of the Relais & Châteaux family.

We’re on the path to reducing our carbon footprint with Green Key Global, a globally recognized certification body that helps hoteliers assess and progress their sustainability efforts. We have received a rating of 4 Green Keys in recognition of our national industry leadership and commitment to protecting the environment through a range of policies and practices.
UNESCO Sustainable Travel Pledge
The United Nations Educational, Scientific and Cultural Organization pledge is a global commitment to reducing the environmental impact of the hospitality industry and supporting visitors in making more sustainable travel choices.
