Memory and transmission

Chef Alexandre Vachon, grandson of farmers, cooks with memory as his guide. His cuisine is shaped by the landscapes of his childhood, the lessons of his mentors, and the emotions that mark his journey. Each dish becomes a fragment of history, a continuation of this place’s story, expressed in his own voice.
